  • 10ozs Self-raising Flour
  • 3 ozs Castor Sugar
  • 3 Large Cooking Apples (preferably Bramleys)
  • 7ozs Butter
  • 1 Egg
  • 1 cupful Currants


  • Cook the apples and the currants until soft. Place the flour in a bowl , make a well in the centre add the sugar and the egg. Flake in the fat then stir well with a knife.Knead lightly to bring it all together.Roll out on a floured board, line the base and sides of a cake tin with about two thirds of the dough.Bake at 170C for 15 mins. Remove from oven and turn up the heat to 200C.Place the fruit mixture on this, roll out remaining dough and top the fruit mixture with this. Return to the oven and bake for a further 25 mins at 200C.Allow to cool and top with icing sugar if serving as a cake. Custard or cream goes very well with it as a dessert.
